A Quick and Easy Chicken Adobo Recipe You Could Impress Your Mom With

August is buwan ng wika and what better way to officially kick it off with a good ol’ recipe that Filipinos are most noted for.

Adobo has gone famous internationally thanks to traveling superstar chefs who are on the look out for awesome food. Two of the most famous variations of this dish are the pork adobo and chicken adobo.

But just how does one prepare this notably, sumptuous dish? Who else knows lutong bahay recipes better than mom, of course!

Quick disclaimer: We're not sure how much people you want to feed - if you're doing a feeding program for a whole village or just a feeding program for yourself. So needed ingredients may vary.

Ingredients
1 kgChicken
2 tbspOil
2 tbspCrushed garlic (or however much garlic you think you want/need - we love garlic)
1 pouchMama Sita's Adobo Mix dissolved in 1 cup (250 ml) water
4 to 5Laurel leaves
A handfulWhole Peppercorns
OptionalHard-boiled eggs

Mama Sita's Adobo Savory Sauce Mix

 
How to prepare
Step 1Dissolve 1 pouch Mama Sita’s Adobo Mix in water. Marinate the chicken in this mixture for 15 minutes.
 
Step 2In a saucepan, heat cooking oil. Remove the chicken from the marinade and fry over high heat until the edges turn golden brown.
 
Step 3Pour in the marinade and bring to a boil. Lower the heat and simmer until chicken is done.
 
Step 4Sauté the garlic until golden, add the chicken pieces and stir-fry. Pour in any remaining sauce from the chicken.
 
Step 5Cook over high heat for another 3 minutes. Remove from heat and serve.
